Einkorn Chocolate Chip Cookies
I love this recipe! It is easily modified with different mix-ins such as dried wolf berries instead of chocolate chips or you can add chopped nuts or any other favorites!
It is important to know that if you use UNREFINED coconut oil, as the recipes states, it will have a slight coconutty flavor. If you aren’t a fan of coconut flavor, you can substitute refined coconut oil which has no flavor.

3 Cups Gary’s True Grit Einkorn Flour
3/4 tsp baking soda
3/4 tsp salt
1 1/2 cups raw sugar
1 cup unrefined coconut oil
2 large eggs
1 tsp vanilla
2 cups cocolate chips
Preheat oven to 350 degrees.
Cream the coconut oil & raw sugar for 4 minutes or until creamy. Add eggs, one at a time. Add vanilla. Sift all the dry ingredients and combine with creaming mixture. Mix in chocolate chips.
Scale cookies to 2 oz each. Freeze for 30 minutes.
Bake 9-12 minutes or until golden brown on top.
